Cervelle de Canut image

Cervelle de canut is a French specialty from Lyon and literally means 'silk worker's brain', named for the silk weavers of 19th century Lyon who were called 'canuts'. It's a fantastic nibble. Spread it over crusty bread.

I was a bit hesitant to try this dish, but I'm so glad I did! It was surprisingly delicious. The cheese and bread were perfectly melted and the egg was cooked just right.

I followed the recipe exactly and it turned out great! The only thing I would change is to add a bit more salt and pepper to taste.
