Cheese and Salami Muffins image

3 eggs
1/2 c milk
1/4 c olive oil
1 1/2 c flour
2 tsp baking powder
1 1/2 c grated berdorfer cheese (or emmenthal, cheddar or gruyere
3 oz salami, finely chopped

Steps:

  • 1. Preheat oven to 350 F.
  • 2. In a bowl mix the eggs with the olive oil and milk. In a separate bowl, mix the the flour and baking powder with a pinch of salt and pepper. Incorporate flour mixture into the egg mixture.
  • 3. Add the grated cheese and the chopped salami to the batter and mix. Grease 9 muffin cups and distribute the batter between the cups. Bake in the preheated oven for 20 minutes.
