1/4 cup chopped onion
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk
1 cup grated cheddar cheese

  • Preheat oven to 350°F Fry the onion in butter until soft, add flour and whisk in with butter for 2 minutes.

  • Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper.

These scalloped potatoes were a bit too rich for my taste. I think I'll use less cheese next time.

I'm not a huge fan of cheese, but these scalloped potatoes were surprisingly good. The potatoes were cooked perfectly and the cheese sauce was light and flavorful.

These scalloped potatoes were a little bland for my taste. I think I'll add some garlic and onion next time.
