Cheesy Jalapeno Corn Casserole (Slow Cooker) image

A yummy, easy and cheesy corn casserole served with a little heat! I typically add one whole large jalapeno, because I like it warmer!

8 ounces cream cheese, softened
2 eggs, beaten
1/2 cup sugar
3/4 cup flour
1/2 cup yellow cornmeal
1/2 tablespoon baking powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
15 ounces frozen corn
14 3/4 ounces creamed corn
1/2 jalapeno pepper, finely chopped
2 cups cheddar cheese, shredded
1 cup milk
2 tablespoons butter, melted

Steps:

  • Spray interior of slow cooker with cooking spray.
  • Mix together cream cheese, eggs and sugar.
  • Combine flour, cornmeal, baking powder, salt, garlic powder and pepper, then add to cream cheese mixture.
  • Add in the remaining ingredients, and mix well.
  • Cook in slow cooker 3-4 hours on high.

I thought this recipe was just okay. The casserole was a little bland for my taste, even though I used a whole can of jalapenos. I think I'll try adding some other spices next time.
