Cheesy turkey casserole image

My husband loves this casserole! It is great with or with out the spinach. I actually created this lighter version from other recipes for this casserole. This casserole can be doubled.....;)

Number Of Ingredients 7

1 lb turkey sausage
1 pkg neufchâtel cheese
1 c frozen spinach
4 slice low fat american cheese
1/4 c grated parmesan
1 can(s) crescent rolls
salt and pepper to taste

Steps:

  • 1. Brown turkey sausage in sauce pan or skillet.
  • 2. Once sausage is thoroughly cooked turn burner to warm & add the cream cheese. Stir until cheese is completely melted. Remove from heat.
  • 3. Squeeze water from spinach & add spinach. At this point u r mixing not cooking.
  • 4. Pour into an 8x8" baking pan that has been coated with cooking spray. Sprinkle with the Parmesan cheese & then top with the cheese slices.
  • 5. Unroll crescent rolls & lay on top pinching seams together to form a crust. Bake in a 375 oven for 15 min or until crust is golden brown. Let cool for 10-15min before serving. ( u will only use about 1/2 of the crescents for this size casserole)

This is a great recipe for a weeknight meal. It's quick and easy to make, and it's always a crowd-pleaser. I usually double the recipe so I have leftovers for lunch the next day.

I'm not a big fan of turkey, but I really enjoyed this casserole. The cheese and breadcrumb topping was the perfect complement to the moist and flavorful turkey.
