Cherry Upside Down Cake image

Delicious, simple snack cake.

1 can(s) (20 ounces) cherry pie filling
1 - 1/2 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 c butter
2 eggs
3/4 c sugar
1/2 - 3/4 c milk
1/2 tsp almond extract
1 tsp vanilla extract

Steps:

  • 1. Heat oven to 350°degree F. Generously butter an 8-inch square baking pan. Spread the cherry pie filling over the bottom.
  • 2. Sift together the flour, baking powder, and salt; set aside.
  • 3. In a mixing bowl, cream butter and sugar. Beat in eggs and flavorings. Beat in the sifted dry ingredients, alternating with the milk. Beat until well blended.
  • 4. Spoon over the cherry pie filling; spread to cover.
  • 5. Bake for 40 to 50 minutes, or until cake springs back when lightly touched with finger.
  • 6. Let cool for about 10 minutes. Loosen sides and carefully invert on a serving plate or cake server. If some of the cherries stick to the pan..just take a spoon and place them back where they belong..I love this cake , because it has just enough almond flavor, and tastes great with the cherries.
