Steps:
- Mix the cornstarch, water, sherry, salt , scallion and ginger in a bowl. Mix the sliced chicken into it Cut the asparagus in slices about 1 inch long (cutting off tough stems at bottom). Heat 1 tbsp oil in wok. Put asparagus in and also 1/2 tsp salt. Fry for two minutes and take out the asparagus with a slotted spoon. Heat the other two tbsp oil in the wok. Cook the chicken with its sauce for 2 minutes. Add in the asparagus. Cook together for 1/2 minute.
