CHICKEN AND ASPARAGUS STIR-FRY. image

1 pound boneless chicken breast, sliced thinly
1 pound asparagus
1/2 tsp salt
Sauce:
1 tablespoon cornstarch
2 tbsp water
2 tbsp Sherry
1 teaspoon salt
2-4 slices fresh ginger root
1 Scallion

Steps:

  • Mix the cornstarch, water, sherry, salt , scallion and ginger in a bowl. Mix the sliced chicken into it Cut the asparagus in slices about 1 inch long (cutting off tough stems at bottom). Heat 1 tbsp oil in wok. Put asparagus in and also 1/2 tsp salt. Fry for two minutes and take out the asparagus with a slotted spoon. Heat the other two tbsp oil in the wok. Cook the chicken with its sauce for 2 minutes. Add in the asparagus. Cook together for 1/2 minute.

This stir-fry was a bit bland for my taste. I added some extra garlic and ginger and it was much better. The chicken was cooked perfectly and the asparagus was still a little crunchy. I would make it again, but I would add more seasonings.
