CHICKEN HONEY NUT STIR FRY image

Number Of Ingredients 10

1 lb chicken breasts (boneless)
3/4 cup orange juice
1/3 cup honey
3 tbsp. soy sauce
1 tbsp. cornstarch
1/4 teas. ginger (ground)
2 tbsp. vegetable oil (divided)
1 large carrot (diagonally cut)
2 stalks celery (diagonally cut)
1/2 cup cashews

Steps:

  • Cut chicken in thin strips and set aside. In small bowl combine orange juice, honey, soy sauce, corn starch and ginger. Mix Well Heat 1 tbsp. oil in a large skillet over medium heat. Add carrot and celery-stir fry about 3 min.. Remove vegetables and set aside. Pour remaining oil in skillet and add chicken. Stir fry about 3 min.. Return vegetables to skillet and add sauce mixture and nuts. Cook and stir over medium heat until sauce is thickened. Serve over hot rice. Makes 4 to 6 servings. Weight watchers- 11 - for full recipe
