400 g chicken fillets, trimmed
150 g halloumi cheese, cut into 4 slices
1 tablespoon lemon zest, shredded
6 sprigs lemon thyme
1 tablespoon olive oil
1 tablespoon honey

Steps:

  • Preheat oven to 180.
  • Place chicken, haloumi, zest and thyme in ceramic baking dish.
  • Combine oil and honey and pour over.
  • Bake 20 minutes or till chicken cooked through.
  • Serve with a rocket salad.
