Chocolate Chip Bundt Cake image

This is a great cake to make for "Father's Day" It's quick and easy and very moist. the frosting is easy and simple. Enjoy with a nice big scoop of vanilla ice cream and spoonful of crushed strawberries!

18 oz chocolate cake mix
1/2 c melted butter or vegetable oil
3 oz pkg. instant chocolate fudge pudding
8 oz container sour cream
4 large eggs
1/4 c rum or brandy liqueur
1 tsp vanilla extract
6 oz pkg. mini chocolate chips
1 c chopped pecans
1 can(s) chocolate fudge frosting

Steps:

  • 1. Heat oven to 350^. Spray a bundt cake pan with non-stick butter spray. Set aside.
  • 2. In a large mixer bowl add the cake mix, melted butter,dry pudding mix, and sour cream, mix well for about 2 minutes..Add eggs one at a time mixing well after each addition. Add rum, and vanilla beat for about 2 minutes.
  • 3. Hand stir in the chocolate chips and pecans., blend well. Pour mixture into prepared bundt pan and bake for about 50 minutes-test with wooden toothpick for doneness. Cool on wire rack for 10 minutes; then remove from pan to cool completely.
  • 4. When cake is cooled. Heat the frosting in the microwave for 3 to 5 seconds, until spreadable. Spread or drizzle over top of cake and let drizzle down sides of cake. Decorate top with pecans if desired. Serve with a scoop of vanilla ice cream and a heaping spoonful of crushed fresh strawberries.
