Chocolate - Espresso Sauce image

1/2 cup hot water
1/3 cup whipping cream
3 tablespoons sugar
2 teaspoons instant espresso powder
8 ounces best-quality bittersweet chocolate, chopped
1/2 cup butter, cut into pieces

Steps:

  • Bring water, cream, sugar and espresso powder to simmer in medium saucepan, stirring occasionally.
  • Reduce heat to low.
  • Add chocolate and butter and whisk until melted and smooth.
  • Keeps, covered and refrigerated, up to 10 days.
