Citrus-Baked Cornish Hens image

The mustard in this dish surprises people. Combined with the citrus, it provides a real double "zing". You can also vary the ingredients, if you like. As an example, I've found the hens are tasty with orange marmalade. My husband's a grade school principal, and we have a 14-year-old daughter and a 12-year-old son-resulting in a lot of schedules to juggle in our house. Sometimes, I'll cut the hens in half and have supper ready in 45 minutes.

I would give this recipe 5 stars if the hens weren't so expensive.

The hens were a little dry, but the flavor was good.

I've made this dish several times and it's always a hit! The hens are always juicy and flavorful, and the citrus marinade gives them a really nice flavor.

This was my first time cooking Cornish hens, and I was so impressed! The citrus marinade made the skin crispy and flavorful, and the hens were cooked perfectly. I will definitely be making this again.
