1 medium orange (juiced)
1 small lemon (juiced)
1 -2 teaspoon liquid honey (or to taste)
2 tablespoons olive oil
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1 cup bulgur (whole grain)
1 1/4 cups boiling water
1/2 cup raisins
1/2 cup sunflower seeds (dry roasted on a hot frying pan for a few minutes)
2 medium carrots (grated)
2 stalks celery, finely sliced (medium size)
2 teaspoons dried mint

Steps:

  • Place the bulgur wheat in a casserole with lid, add the boiling water, stir with a fork, and leave to soak for 20 minutes until the water has been absorbed (drain the bulgur in a strainer if any water is left).
  • In a mixing bowl, whisk together the orange juice,lemon juice, olive oil, honey, salt and pepper, and pour the mixture over the bulgur wheat.
  • Add the prepared vegetables, raisins, roasted sunflower seeds, and dried mint, and mix well.
