- Combine rice, juice, and coriander in a 6-cup or 1-quart heat-proof dish that fits easily into your pressure cooker. Add rack to cooker and pour in 1 cup water. Using a foil sling, lower dish into cooker. Lock lid and bring to full pressure. Adjust heat and cook for 5 minutes. Naturally release pressure. Use sling to remove dish from cooker. Stir in chopped scallions and oranges, fluffing with a fork to mix. Top with chopped pecans.Cook's Note: If rice is still crunchy after cooking, return cooker to full pressure and cook for 1-2 minutes more. Or, cover bowl with plastic wrap and microwave for 1-2 minutes or until reaches desired tenderness.
