My sister in law made this for me when I was staying with her on holiday, I just loved it. I have made it myself a few times now, and will keep making it.

Steps:
- 1. Soak dried. Mixed fruit in cold tea for at least 2 hours or over night.
- 2. Put flour and sugar into a bowl and mix well, add the cold tea and mixed fruit. You may need a little more tea, depending on how dry your fruit is.
- 3. If needed add some more cold tea till your mixture is the same as a cake batter.
- 4. Place in a heated 180c oven and cook for 45 minutes or until a skewer comes out clean. ENJOY.
