Coriander Peanut Pesto image

This is a recipe from Christine Manfield. Pesto with an Asian twist. The ingredients should be available from Asian food stores/markets. It is important to use Vietnamese mint, not ordinary mint, as the flavour is quite different.

This pesto is a great make-ahead meal. I like to make a big batch and freeze it in small containers so I can have it on hand whenever I need it.

I had some trouble finding fresh coriander, so I used dried coriander instead. It still turned out great!

This pesto is a bit too spicy for my taste, but I was able to tone it down by adding some extra olive oil.
