Corn and Macaroni Casserole image

This is just a good side dish with many diferent meats. Add a green salad and you have a meal!

Number Of Ingredients 10

1 can(s) whole kernel corn and juice
1 can(s) cream style corn
1 can(s) small can, chopped green chilis (opt.)
1 small onion, chopped
1/2 c chopped red or green bell pepper
1 stick butter or margarine
8 oz processed cheese, cubed
1/4 c evaporated milk
1 c elbow macaroni, dry
salt and pepper to taste

Steps:

  • 1. Mix together corn, onion, pepper, chilis (opt.) and dry macaroni. Slice butter into the mixture along with the cheese. Add milk. Add seasoning to your liking. Pour into a greased casserole dish with a lid.
  • 2. Cover and bake at 350 degrees for 30 minutes. Remove lid and stir. Add more milk if mixture seems dry.
  • 3. Continue baking, uncovered, for another 30 minutes until top is a little browned and macaroni is tender. If mixture seems too dry, add more milk. Some corn has more liquid than others. Let set a few minutes, covered, and serve.
