1 large shallot, coarsely chopped
3 slices bacon
1/2 cup white wine (such as Pinot Grigio)
3 cloves garlic, chopped
1 large jalapeño chile, finely chopped
1 chipotle chile, finely chopped, if desired
3 cups chicken stock or Progresso™ reduced-sodium chicken broth

I'm a vegetarian, so I made this stew without the chicken. It was still very flavorful and satisfying. I served it over rice.

This recipe is a great starting point, but I made a few changes to suit my taste. I added a bit of chili powder and cumin, and I used chicken broth instead of vegetable broth.

I followed the recipe exactly and my stew turned out bland. I think I might have used the wrong type of tomatoes. Next time, I'll try using Roma tomatoes.

This stew was okay. It wasn't bad, but it wasn't anything special either. I think I would have liked it more if I had used fresh corn and tomatoes.

This corn and tomato stew was an absolute delight! The flavors were incredibly well-balanced, and the textures were perfect. I especially loved the pop of sweetness from the corn and the tanginess from the tomatoes.
