Cornbread Salad image

I could eat the whole bowl by myself!

1 medium green pepper, chopped
2 medium tomatoes, diced
1 small sweet onion, finely diced
1 lb bacon, cooked crisp & crumble
6 medium hard boiled eggs, chopped fine
1 large pan of cornbread
mayonnaise to your taste

Steps:

  • 1. In large bowl crumble up the cornbread and mix together with the green pepper, tomatoes, onion, bacon, & eggs.
  • 2. Add just enough mayonaise to make the mixture moist. Stand in the frig overnight and serve.
