Cornmeal Pie image

This is a great recipe from Taste of Home. Thought I would share it for the holidays.

Number Of Ingredients 10

1 c butter, softened
1 1/2 c granulated sugar
3 large eggs
1 1/2 c light corn syrup i use karo
1/2 c milk
1 tsp vanilla extract
1/2 c cornmeal
3 Tbsp all purpose flour
2 9-inch pie shells-unbaked
whipped cream, for garnish

Steps:

  • 1. In a large bowl, cream butter and sugar. Beat in eggs, one at a time. Add corn syrup, milk and vanilla; mix well. Fold in cornmeal and flour. Pour into pie shells.
  • 2. Bake at 350^ for 25 minutes. Reduce heat to 300^. Bake 20-25 minutes longer or until silver knife inserted in the center comes out clean. Cool on a wire rack. Garnish with whipped cream if desired, Sprinkle with cinnamon sugar mixture if desired. Refrigerate any leftovers. Makes 2 pies.
