Cracker Corn Pudding image

This recipe is from a friend...I lost my mom's recipe but this is the same one she used. Delicious comfort food and a great potluck dish.

Number Of Ingredients 10

2 large eggs, lightly beaten
1 can(s) cream style corn, 15 oz.
1 can(s) whole kernel corn, do not drain
1 can(s) evaporated milk, 6 oz.
1/2 chopped onion, 1/4 c - 1/3 c
1/2 tsp salt
1/4 tsp pepper
1 sleeve saltine crackers, crushed
12 oz shredded cheese; monterey jack, colby, cheddar, etc.
4 Tbsp butter, cubed

Steps:

  • 1. Preheat oven to 325. Grease 13 X 9 pan.
  • 2. Beat eggs slightly in a large bowl.. Stir in whole kernel corn (do not drain) and cream-style corn. Add evaporated milk, onion, butter, salt and pepper. Fold in crackers and shredded cheese. Pour into baking dish. Bake 1 hour or until set. Let stand a few minutes and enjoy!

This pudding is a great make-ahead dish. I can make it the night before and then just pop it in the oven when I'm ready to serve it.
