Cranberry Mandarin Salad with Walnut Vinaigrette image

I prefer to use spinach or other dark leafy greens because they are tastier than iceberg, and also because of the amount of calcium they contain. I'm always looking for ways to boost my calcium intake since I can't eat dairy. -Holly Bauer, West Bend, Wisconsin

I'm not a fan of walnuts, so I substituted pecans instead. The salad still turned out great.

I followed the recipe exactly and the salad turned out great. The only thing I would change is to add a little more salt to the vinaigrette.

This salad was a hit at my last dinner party. The combination of flavors - tart cranberries, sweet mandarins, crunchy walnuts, and tangy vinaigrette - was divine! I followed the recipe exactly and it turned out perfectly.
