CRANBERRY ORANGE SCONES image

A great Scottish recipe to have around the holidays, but still good any time at all, at tea time, or for breakfast--yum! Recipe & photo: food.com

1 1/2 c all purpose flour
1/4 c sugar
3 tsp baking powder
1/4 tsp salt
1/4 c butter
1/2 c dried cranberries
2 tsp grated orange rind
1/2 c buttermilk
1 egg
1 c powdered sugar
2 to 3 Tbsp orange juice

Steps:

  • 1. In a large bowl, mix together flour, 1/4 cup sugar, baking powder, and salt. Cut in the butter with a pastry blender or fork until the mixture resembles coarse crumbs.
  • 2. Stir in the cranberries and orange peel.
  • 3. In a small bowl, mix buttermilk and egg; add to dry ingredients all at once, stirring until mixture is just moistened.
  • 4. On a floured board, knead gently a few tiimes, but not too much. Form into a patty on an ungreased cookie sheet; cut into 8 wedges with a knife but do not move it.
  • 5. Bake in a preheated 400-degree oven for 15-25 minutes or until light golden brown.
  • 6. Mix together powdered sugar and orange juice into a glaze; drizzle over scones. Separate scones and serve warm.

I tried making these scones and they turned out just ok. The flavor was a bit bland and the texture was a little too dry. I think I might have overmixed the dough. Overall, I wouldn't recommend this recipe unless you're a very experienced baker.
