Steps:
- butterfly tenderloin and pound to 1/2 thicknessand sprinkle with salt. Chop apples skin on mix cranberries, apples, sugar and cinnamon in bowl. Put 1/2 filling on tenderloin. Roll tenderloin tucking ends and tie with string. Coat ouside with mustard. Broil 10 min then reduce heat to 350 and place rest of filling and water in pan bake 20 - 30 min (155 F) let rest 10 min. Cut and serve with port wine sauce.
