Cranberry Rice ~ Savoring Cape Cod image

This makes a great side dish with any seafood recipe. Easy enough to make as well. Taken from the cookbook "Savoring Cape Cod"

Number Of Ingredients 8

1-2 Tbsp canola oil
2 clove garlic, minced
1 c chopped onion
2 c long grain white rice
3 c chicken broth
1/2 c dried cranberries
1/2 c chopped scallions
salt and pepper to taste

Steps:

  • 1. Saute' the garlic and onions in a 2 quart saucepan until the onions are translucent. Add the rice and chicken broth, cover and bring to a boil. Reduce heat to simmer and cook for 20 minutes. Remove from the heat, but do not remove the cover for an additional 20 minutes.
  • 2. Toss the rice with the cranberries and scallions. Add salt and pepper to taste. Serve 6-8 submitted by Joanne Hush

This dish was a little too tart for my taste. I think I would have preferred it with fresh cranberries instead of dried. Otherwise, it was a pretty good recipe.

I've made this recipe several times now and it's always a crowd-pleaser. The cranberries and walnuts add such a nice touch. I also like to add a little bit of grated orange zest to brighten up the flavor.
