Creamy, cheesy potatoes au gratin image

This is a delicious lower fat recipe I make w/ low fat cream cheese and light cream. Great for sunday brunches or as a side dish.

3 Tbsp unsalted butter
1 onion, finely chopped
1 c 2% milk
1/2 c light cream
salt and pepper to taste
8 oz reduced-fat cream cheese, cut into cubes
3/4 c grated parmesan cheese
1/4 c chopped fresh parsley
1 Tbsp fresh thyme
3 lb red potatoes, peeled, cut into 1/2'-slices
chopped chives for garnish

Steps:

  • 1. Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Melt butter in lg skillet over medium heat. Add onion, cook about 5 mins, stirring occasionally.
  • 2. Add the milk, cream and 1/2 tsp pepper. Bring to a low simmer. Add cream cheese. Cook, stirring until melted. Stir in 1/2 cup parmesan cheese, parsley and thyme.
  • 3. Place potatoes in casserole dish. Pour milk mix over potatoes and sprinkle w/ 1/4 cup parmesan cheese. Cover casserole dish w/ foil. Place casserole dish on a lg baking sheet. Bake until potatoes are tender, about 1 hr. Sprinkle w/ chives.

I love this recipe! It's so easy to make and always turns out delicious. I've made it several times for potlucks and it's always a hit. The potatoes are always cooked perfectly and the cheese sauce is so creamy and flavorful.
