Creamy Ground Beef Casserole image

An amazing, delicious casserole. So good with salad and garlic bread.

1 1/2 lb ground beef
1/2 tsp garlic powder
1/2 tsp salt
4-1/2 c spaghetti sauce
1-1/2 c sour cream
1 c chopped onions
1/2 lb wide noodles, cooked
2-1/2 c grated monterey jack cheese, divided
1 c canned sliced mushrooms
1/4 c grated parmesan cheese
1 large egg. slightly beaten
2-1/2 c grated parmesan cheese
1-1/2 c grated monterey jack cheese
1 pkg {10 ounce} frozen spinach, thawed and well drained
1/3 c chopped green onion

Steps:

  • 1. Brown ground beef; then add garlic, onions, and mushrooms, drain, then season with salt to taste. Add in 1/2 cup of parmesan cheese and spaghetti sauce; mix to combine, then simmer for 20 to 30 minutes over medium low heat, covered.
  • 2. In a large bowl, combine spinach with 2-1/2 cups monterey jack cheese, sour cream, egg, green onion, garlic powder and 1/4 cup grated parmesan cheese; Mix to combine, then fold in cooked noodles.
  • 3. In a greased 9 X 13 inch pan, spoon in the spinach mixture. Sprinkle with 1 cup parmesan cheese. Top evenly with the ground beef mixture, then sprinkle 1 cup parmesan cheese over the ground beef mixture.
  • 4. Bake at 350 degrees, uncovered for 25 to 30 minutes; remove from oven, then sprinkle with 1-1/2 cups monterey jack cheese on top. Return to oven and bake for 5 minutes more.
  • 5. You can use grated mozzaella cheese for the top. Cover and let sit for 10 minutes before serving.

This casserole was a disaster! The sauce was runny and the ground beef was overcooked. I had to throw the whole thing away.
