CREOLE SHRIMP SAUSAGE STEW image

Yield 4 1 cup servings

Number Of Ingredients 9

2 tsp Olive Oil
1 cup chopped green bell peppers
1 cup thinly sliced turkey sausage like andouille(6oz)
1 tsp minced garlic
3/4 cup less-sodium chicken broth
1 (10 oz) can diced tomato and green chilies, undrained (like Rotel)
8oz peeled and deveined med. shrimp
1 (15oz) can kidney beans, rinsed and drained
2 Tbs chopped fresh parsley

Steps:

  • 1. Heat oil in a large saucepan over medium-high heat; saute bell peppers, garlic and sausage, stiring occasionally, about 3 minutes or until peppers are tender. 2. Add broth and tomatoes; bring to a boil. 3. Add shrimp and beans, cover and reduce heat ans simmer for 6 minutes or until shrimp are done. Sprinkle with parsley.
