Crepes for Two image

I'm only cooking for two now and always on the look out for recipes that can be reduced to smaller portions, i.e., not easy to split one egg. I fill my crepes with marmalade, roll and sprinkle with powder sugar. DH like a splash of maple syrup on his. The possibilities are endless with these tasty little morsels.

I'm allergic to dairy, so I can't make these crepes. Is there a substitute for milk and butter?

I've tried many crepe recipes, but this one is by far the best. The crepes are light and fluffy, and they don't tear easily.

My crepes came out perfect! They were thin, delicate, and slightly crispy around the edges. I served them with fresh berries and whipped cream, and they were absolutely delicious.
