Time 30m

Number Of Ingredients 12

4 c shredded zucchini
1 tsp salt
2/3 c flour
2 large eggs beaten
1/3 c sliced green onions
2 cloves garlic minced
1/2 tsp onion powder
1/4 tsp ground cayenne pepper
1/2 c gouda cheese shredded
vegetable oil
sour cream
chopped fresh parsley

Steps:

  • 1. Place one cup of zucchini in a colander in the sink and sprinkle with salt. Layer another cup of zucchini and sprinkle salt. Repeat until all the zucchini is salted. Let it sit 1-2 hours. Using a clean large bowl; push the bottom of it into the colander squeezing the liquid out of the bottom of the colander. Do this several times squeezing as much liquid as possible out of the bottom of the colander.
  • 2. Transfer zucchini to a large bowl. Add flour, eggs, green onions, garlic, onion powder, cayenne and Gouda. Stir until the mixture is combined.
  • 3. Heat 4-6 tablespoons vegetable oil in large skillet over medium heat. Once the oil is hot add 1/4 cup (about the size of a small pancake) of the zucchini mixture to the skillet. Cook 3 minutes: pressing down with the back of a spatula. Flip and cook an additional 3 minutes or until golden brown. Remove to paper towels.
  • 4. Serve warm with sour cream and fresh parsley.

I've tried other zucchini fritter recipes before, but this one is by far the best. The addition of cheese and herbs really makes all the difference.

I love that these fritters are baked instead of fried. They're still crispy and delicious, but they're much healthier.
