Well this was a winner. I got a two thumbs up on this one and it will be in high rotation I'm sure. I recreated fried chicken with a little zing from the onions. I think I may try it with smashed Cap'n Crunch cereal one day.

Time 1h

Number Of Ingredients 6

1/2 c butter, melted
1/2 tsp oregano, dried
1 Tbsp worcestershire sauce
1 tsp whole grain mustard
1 large french fried onions package
6 chicken thighs, skinless or 4 boneless skinless breasts.

Steps:

  • 1. In a small wide mouth bowl, combine butter, worcestershire sauce and mustard. Crush the fried onions into a separate bowl. (This will be your breading)
  • 2. Dip chicken in butter mixture, then coat with onions. Prepare a baking dish with olive oil (I use a cast iron skillet); Put the coated chicken pieces into the skillet and drizzle the remaining butter over the chicken.
  • 3. Bake, uncovered, at 400° for 40 minutes or until chicken is cooked through

I'm not sure why this recipe is called 'unfried' chicken, because it definitely tastes like it's been fried. But that's not a bad thing!
