Crock Pot BBQ Beef Sandwiches image

I love this simple dish. It's so easy and tastes great. I usually use a homemade barbecue sauce but a good hickory flavored sauce is good too. I like to freeze this in individual portions to make a quick dinner when I don't want to cook.

3 lb bonless beef chuck, cut into 4 pieces (or bottom round roast)
1 medium onion, chopped
3 clove garlic (or 1/2 teaspoon garlic powder)
1 tsp salt
1/2 tsp pepper
3/4 c water
2 c barbecue sauce (homemade or purchased)
8 hoagie buns, or hamburger buns, or kaiser rolls

Steps:

  • 1. Place the onion and garlic on the bottom of the crock pot.
  • 2. Top with the beef pieces and season with salt and pepper.
  • 3. Add the water and cover and cook on LOW for 9 hours or until the beef falls apart with a fork.
  • 4. Remove all of the liquid from the beef.
  • 5. Trim and discard the excess fat from the cooked beef.
  • 6. Shred the meat with two forks until no solid pieces remain.
  • 7. Add the BBQ sauce and mix thoroughly.
  • 8. Serve the beef on split buns or hoagies.
  • 9. This recipe makes approximately 7-8 cups of shredded beef. Can be covered and refrigerated for up to 4 days for later use.
