Crustless Asparagus Quiche image

Easy to prepare. Great for breakfast or paired with a salad for lunch or dinner.

8 oz asparagus (cut in 1" pieces and cooked)
6 large eggs
2-1/4 c shredded mozzarella cheese, reserve 1/4 c.
2 clove garlic
salt & pepper to taste
2 c baby spinach leaves
2 Tbsp parmesan cheese, canned grated

Steps:

  • 1. Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.
  • 2. Beat all six eggs and reserve 1/4 cup.
  • 3. Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.
  • 4. Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.
  • 5. Bake at 375 degrees F for about 30 minutes or until edges start to brown.

Overall, I thought this quiche was pretty good. It was easy to make and had a nice flavor. I would definitely make it again.
