This will serve 4 people, but can easily be doubled and baked in a 13 x 9-inch baking dish, also adjust the amount of curry powder to suit taste. One 16-ounce package frozen cauliflower may be substituted for fresh, but the fresh is better! To make this into a main dish throw in some cooked chopped chicken or turkey.

This casserole was a bit bland for my taste. I think I'll add some more spices next time.

This casserole was a bit too spicy for my taste, but I think I just added too much curry powder. Next time I'll use less.

I'm not a big fan of cauliflower, but this casserole was surprisingly good. The curry flavor really masked the cauliflower taste.

This casserole is a great way to use up leftover cauliflower. I also like to add some chopped chicken or tofu for extra protein.

I love the combination of flavors in this casserole. The curry, coconut milk, and cauliflower all work together perfectly. I also appreciate that it's a vegetarian dish, so I can serve it to my friends who don't eat meat.

I've made this casserole twice now and it's always a crowd-pleaser. The curry flavor is just right - not too spicy, not too mild. And the cauliflower is roasted to perfection.
