Dewberry Dumplings image

Top with whipped topping or ice cream.

Number Of Ingredients 17

FILLING:
2 1/2 c dewberries (or blackberries)
2-4 Tbsp honey
2 Tbsp tapioca flour
1/2 tsp black pepper
zest of 1/2 lemon
DUMPLING:
1/4 c coconut flour
3/4 c almond flour
3 Tbsp coconut oil
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp sea salt
2 eggs
2 Tbsp honey
1 tsp vanilla
zest of 1/2 lemon

Steps:

  • 1. For dumplings: sift flours, baking powder and salt. Cut in cold coconut oil with fork until crumbly. Place in freezer for 10 minutes.
  • 2. Preheat oven 400.
  • 3. For filling: In a medium saucepan add berries, honey, pepper and zest. Heat over medium and bring to simmer. Whisk in tapioca flour and simmer 10 minutes.
  • 4. Pour hot berries into casserole dish and place in oven.
  • 5. In medium bowl beat eggs, honey, lemon zest, cinnamon and vanilla. Add chilled flour mixture to eggs and mix until dough comes together.
  • 6. Carefully remove dish from oven and drop 8 dumplings onto bubbling berries. Return to oven and bake 15-20 minutes, until dumplings are golden, set and cooked through.
  • 7. Remove dish from oven and allow to cool completely and serve at room temperature.

I'm not a huge fan of dewberries, but I really enjoyed these dumplings. The filling was sweet and tart, and the dumplings were fluffy and light.
