My two sons, Joseph and Joshua, named this recipe "Dirty Potatoes" because the potatoes actually look dirty.

Steps:
- 1. Preheat oven to 425.
- 2. Scrub or peel potatoes, cut into bite sized pieces. Place in bowl and drizzle with olive oil. Sprinkle with dry onion soup mix, stir to coat.
- 3. Spray a baking sheet with cooking spray. Put potatoes on sheet. Bake 20-25 minutes or until fork tender.
