Durgin-Park Cornbread image

This recipe comes from The Durgin-Park Cookbook. Durgin-Park is a famous Boston restaurant. "Thick, yellow squares of cornbread arrive at the table before every Durgin-Park meal. It is grainy and rough-textured, moist and slightly sweet. Sturdy enough to smear with butter. The secret is mixing it by hand.....a machine makes it too fine, and you end up with cake."

I'm not sure what went wrong, but my cornbread turned out dry and crumbly. I followed the recipe exactly, so I'm not sure what happened. Maybe I overcooked it?

Durgin-Park cornbread is a classic for a reason! I've been making it for years and it always turns out perfect. The texture is moist and fluffy, and the flavor is sweet and slightly tangy. I love serving it with honey butter or maple syrup.
