2 tablespoons olive oil
4 (8 ounce) salmon fillets
4 medium potatoes, peeled and sliced
2 large red onions, sliced into rings
1 jarred roasted red pepper, drained and cut into strips
8 ounces portobello mushrooms
1 tablespoon fresh lemon juice
salt and pepper to taste
1 teaspoon sesame oil

The sauce was a bit too thin. I think I'll add a bit more cornstarch next time to thicken it up.

The salmon was a bit overcooked. I think I'll cook it for a shorter amount of time next time.

This dish was a bit too salty for my taste. I think I'll reduce the amount of salt next time I make it.

I was a bit hesitant to try this recipe because I'm not a big fan of mushrooms. But I'm so glad I did! The mushrooms added a wonderful depth of flavor to the dish.
