I just love bananas in any ways shape or recipe...This recipe was found in the South Dakota Govenors cook book this year...It is YUMMY. At least now no one can say you don't eat enuf fruits. lol

Steps:
- 1. preheat oven to 375 degrees. In a large bowl mash the bananas and mix with the orange juice, butter, and brown sugar. In a second bowl, mix the dry ingredients witha a whisk.
- 2. Add the dry ingredients to the wet ingredients and mix well. Spoon into a muffin tin and bake for 30 minutes. Makes one dozen muffins.
- 3. variations: substitute one half cup apple sauce for one half cup of the banana and add one half cup raisins and one half cup chopped nuts. OR put slices of banana into each muffin before cooking.
