Easy Jambalaya in the Crockpot image

Found this recipe through Pinterest. What's better than Jambalaya that cooks itself? Great flavor. Shrimp (raw) can be added if desired in the last half hour of cooking.

1 lb boneless, skinless chicken breasts cut up in small pieces
1 lb andouille sausage, sliced
1 can(s) 28oz diced tomatoes
1 large onion, chopped
1 large green bell pepper, chopped
1 c chopped celery
1 c chicken broth
2 tsp dried oregano
2 tsp dried parsley
2 tsp cajun seasoning
1 tsp cayenne pepper
1/2 tsp dried thyme
1 c instant rice

Steps:

  • 1. Place all ingredients except rice in slow cooker. Cook on low for 7-8 hours, or on high for 3-4 hours
