Easy Roasted Carrots and Shallots image

This carrot and shallot side dish goes well with roast chicken.

Number Of Ingredients 6

2 pounds carrots, cut into 3-inch lengths, thick pieces halved lengthwise
12 ounces shallots (about 10), peeled and halved lengthwise
2 tablespoons olive oil
Coarse salt and ground pepper
1/2 cup fresh parsley leaves
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 450 degrees. On a large rimmed baking sheet, toss carrots, shallots, and oil; season with salt and pepper. Bake until tender, 30 to 35 minutes, tossing once halfway through. Add parsley and lemon juice; toss to combine.

Not a fan. The shallots were overpowering and the carrots were mushy.

The carrots and shallots were a bit bland, even after roasting for the full time. I think I would add some herbs or spices next time.

Easy to make and very tasty. I used a bit less balsamic glaze than the recipe called for, and it was still plenty flavorful.

This dish was absolutely delicious! The carrots and shallots roasted together perfectly, and the balsamic glaze added the perfect finishing touch. I will definitely be making this again.
