Cooked endive is comfort food, and like raw endive in a salad, it goes very well with walnuts and walnut oil.

Time 1h

Yield Serves four

Number Of Ingredients 9

1 pound Belgian endive (about 6 endives), quartered lengthwise
Salt to taste
1 pound red potatoes, quartered
1/4 cup broken walnut pieces
2 tablespoons chopped flat-leaf parsley
1 teaspoon fresh thyme leaves, chopped
2 tablespoons walnut oil
1/2 cup grated Gruyère cheese (2 ounces)
Freshly ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Oil a two-quart baking or gratin dish. Bring a large pot of water to a boil. Fill a bowl with ice water. When the water comes to a boil, salt generously and add the endives. Blanch for two minutes, and transfer to the ice water. Cool in the ice water, then drain and dry on paper towels. Cut crosswise into thirds, and transfer to a bowl.
  • Steam the quartered potatoes for 10 to 15 minutes until tender. If the potatoes are large, cut the quarters in half. Add to the bowl with the endives, along with the walnuts, parsley, thyme, walnut oil and half the Gruyère. Season with salt and pepper, and toss everything gently together. Turn into the prepared baking dish, making sure to scrape all of the contents of the bowl into the dish. Sprinkle the remaining Gruyère over the top.
  • Place in the oven and bake 20 to 25 minutes, until the edges of the vegetables are browned and the gratin is sizzling. Remove from the heat and serve hot or warm.

I'm not a big fan of endive, but I really enjoyed this gratin. The potatoes and walnuts were a great combination.

This gratin was a bit too heavy for my taste. I think it would have been better with a lighter cheese, like a mozzarella or fontina.

This gratin is a great way to get kids to eat their vegetables. My kids love the endive and potatoes, and they don't even notice the walnuts.

I'm on a low-carb diet, so I made this gratin without the potatoes. It was still very good, but I think it would have been better with the potatoes.

This gratin is a great way to use up leftover potatoes. I always have a few leftover potatoes after I make mashed potatoes, and this is a great way to use them up.

I'm not a fan of walnuts, so I omitted them from the recipe. The gratin was still very good, but I think it would have been even better with the walnuts.

This gratin was just okay. It wasn't bad, but it wasn't anything special either. I think it would have been better with some more cheese.

I'm a vegetarian and I was looking for a gratin recipe that didn't contain meat. This recipe was perfect! The endive and potatoes were very flavorful and the walnuts added a nice touch.

This gratin was a disaster! The potatoes were undercooked and the endive was wilted. I followed the recipe exactly, so I'm not sure what went wrong.

The gratin was easy to make and turned out great! The only thing I would change is to use a different type of cheese. I used cheddar, but I think a Gruyère or Parmesan would be better.

This dish was a bit too bland for my taste. I think it would have been better with some more herbs or spices.

This endive and potato gratin was a delightful dish! The flavors of the endive, potatoes, and walnuts complemented each other beautifully. The gratin was also very easy to make, and it looked very impressive when it came out of the oven.
