Fagiole Pasta (Not Pasta Fagiole Soup) image

This is a Southern Calebrese (Soveria-Simeri) variation of Pasta Fagiole Soup, only it's really a pasta dish with a flavorful tomato, bean, and onion sauce.

1 (14 ounce) can northern white beans, drained & rinsed
1 white onion, diced
1 garlic clove, minced
1/4 cup extra virgin olive oil
28 ounces tomato sauce
1 (14 ounce) can chicken broth
6 ounces ditali pasta

Steps:

  • Sautee onion and garlic in olive oil until soft. Add beans, tomato sauce and broth. Simmer for 20-minutes, stirring frequently. Cook pasta and drain. Add beans and sauce and mix thoroughly. Serve right away.
