I adapted this recipe from one called Man Pleasing Chicken. I didn't have one of the ingredients so I swapped it out and my 10 year old son named it Family Pleasing Chicken.

Categories     Chicken

Time 50m

Number Of Ingredients 6

2 lb chicken thighs, skinless and boneless
1 c mustard, whole grain or dijon, or both
1/2 c honey
2 Tbsp apple cider vinegar
1 pinch salt
1 pinch pepper

Steps:

  • 1. Preheat oven to 425 degrees.
  • 2. Mix together mustard, honey, and vinegar.
  • 3. Put chicken thighs in an oven proof baking dish. Salt and pepper the thighs. Pour mustard mixture over chicken, turning thighs in the mixture so they are fully coated.
  • 4. Put chicken in the oven and bake for 40 minutes or until a meat thermometer reads 165 degrees. Baste the chicken with sauce halfway through.
  • 5. Remove chicken from oven and let rest 5 minutes. Serve over rice or quinoa and use top with extra sauce from the baking dish.

This recipe is a great way to get kids to eat their vegetables. The chicken is coated in a flavorful sauce that kids love, and the vegetables are hidden in the sauce. It's a win-win!

I love this recipe because it's so easy to make. The chicken cooks in the oven while I'm preparing the sauce. It's a great weeknight meal.
