2 tablespoons olive oil
1 cup finely chopped onion
1/3 cup finely chopped fresh parsley
1 tablespoon finely chopped of fresh mint
1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill
2 garlic cloves, minced
2 lbs green beans, trimmed
1/2 teaspoon salt
1/2 teaspoon black pepper
2 (14 1/2 ounce) cans stewed tomatoes, undrained

Steps:

  • Heat oil in a stockpot over medium-high heat.
  • Add onion; sauté 3 minutes.
  • Add herbs and garlic; sauté 4 minutes.
  • Add beans and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until beans are tender.
