Categories     Roast Beef

Time 30m

Yield 4 serving(s)

Number Of Ingredients 4

4 lbs filet of beef, trimmed and tied
2 tablespoons unsalted butter, at room temperature
1 tablespoon kosher salt
1 tablespoon fresh coarse ground black pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the beef on a sheet pan and pat the outside dry with a paper towel.
  • Spread the butter on with your hands.
  • Sprinkle evenly with the salt and pepper.
  • Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare.
  • Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for 20 minutes.
  • Remove the strings and slice the fillet thickly.
  • Note: Be sure your oven is very clean or the high temperature will cause it to smoke.

I would recommend using a meat thermometer to make sure the steak is cooked to your desired doneness.

The ingredient list is a bit long, but the end result is worth it.

I'm giving this recipe 3 stars. The meat was a bit dry and the flavors were not as complex as I expected.

This recipe was a bit too complicated for me. I ended up overcooking the meat. But the flavors were good.

I've tried many beef tenderloin recipes over the years, but this one is by far the best. The secret is in the marinade, which infuses the meat with so much flavor. I highly recommend this recipe to anyone who loves a great steak.

This beef tenderloin recipe was an absolute delight! The meat was cooked to perfection and melted in my mouth. The flavors were rich and complex, with the garlic, herbs, and wine complementing each other beautifully. I'll definitely be making this ag
