cake
1 1/2 c granulated sugar
2 large eggs
1/2 c vegetable oil
2 c all purpose flour
1/2 tsp salt
2 tsp baking soda
1 can(s) fruit cocktail with juice
1/2 c flaked coconut
frosting
1/2 c butter (not margarine)
3/4 c granulated sugar
1/2 c evaporated milk
1 tsp pure vanilla extract
1/2 c flaked coconut
1/2 c walnuts or pecans, chopped

Steps:

  • 1. Cake: Beat sugar, eggs and oil together.
  • 2. Add flour, salt and baking soda.
  • 3. Add fruit cocktail with the juice; mix well.
  • 4. Pour batter into a greased and floured 9x13x2 inch pan. I use Kittencal's professional pan coating.
  • 5. Sprinkle coconut over batter.
  • 6. Bake at 350 degrees Fahrenheit for 45 minutes.
  • 7. Frosting: Place butter, sugar and evaporated milk in a medium size saucepan.
  • 8. Bring to a boil,stirring constantly, for 5 to 6 minutes or until it begins to thicken.
  • 9. Remove from heat.
  • 10. Add vanilla extract, coconut and nuts.
  • 11. Spread mixture onto cake while both are still hot.
  • 12. Serve warm or at room temperature.
