Categories     Drinks

Yield 1 serving

Number Of Ingredients 9

8 lime rinds, halved and squeezed, juice reserved for another use
1 cup sugar
ice
2 oz white rum
1 oz lime juice
1 oz lime rind simple syrup
4 fresh mint leaves, plus more for garnish
ginger beer, to taste
1 slice lime, for garnish

Steps:

  • In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there's syrup in the bottom of the bowl.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible. Store in an airtight container in the refrigerator for up to 3 months.
  • In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with ginger beer.
  • Garnish with the slice of lime and mint leaves.
  • Enjoy!

I tried this recipe last night and it was a huge hit with my friends! The combination of ginger and mint was so refreshing and unique. I also loved that it was made with all-natural ingredients. I will definitely be making this again soon!
