Steps:
- 1. Preheat oven to 350 degrees. Prepare muffin pan (grease or line with paper muffin liners. 2. In big bowl, mix dry ingredients well (1st 8) 3. In separate bowl, mix egg, milk, vanilla, coconut oil, honey/maple syrup, molasses, grated apple, zucchini and carrot. 4. Mix wet ingredients in w/dry, then add remaining nuts, coconut, flaxseeds and dried fruit. 5. Bake for 23-25 minutes.
