It's so hard to find good and easy GF recipes but this one is easy and good! Diabetics, I haven't tried these with Splenda or other sugar substitutes so I don't know if that works.

Steps:
- 1. Add butter and sugar to a large mixing bowl and mix until light and fluffy. Add milk and vanilla and mix again. In a separate bowl mix flour and salt. Gradually add the flour and salt mixture to butter and sugar mixture while slowly mixing. When mixed well use your hands to form into balls and wrap the balls over a pecan, etc. Seal around the pecan completely. Place on an ungreased baking sheet. Bake about 350 for 18 to 20 minutes or until lightly brown. Remember ovens vary in temperature. Roll gently in powdered sugar and place on serving dish or store in air tight container.
- 2. Note/Options: You might want to make a separate batch with each of the nuts listed above or substitute any ingredient that you can wrap in the dough. If you want to leave the surprise nut centers out just flatten the balls a little to make a cookie and cover with the powdered sugar when done. If you want to make a cookie or ball without whole nuts inside but still want nuts, chop or grind the nuts small and stir in before making the balls or cookies. Cook and roll in powdered sugar as above. You may make the balls smaller if the whole nuts are not used. Just make sure to not over cook anything which ever way you make these bon bons. Put a cherry inside and dip in melted chocolate - yummy!
